Why JM-03

From 1986 to 1997, USDA researchers screened 1,320 cacao trees across Puerto Rico. Only three percent of them produced sixty percent of the yield — that is how much tree selection matters. Juan Echevarría of Hacienda Jeanmarie learned grafting and propagation alongside that program and has spent years running the same kind of selection on his own trees, adding bean size and flavor in the finished bar to the filter. JM-03 is the standout of the numbered JM line that came out of that work.

At Cuerdas Verdes we grow JM-03 on our own farm in Mayagüez and make bean-to-bar chocolate.
